Fresh Mozzarella Class is a hands-on class taught by Dave Potter, owner of Madison's only cheesemaking-supply store, GetCulture, Inc. During this 2-hour workshop, participants will work in small teams to make a batch of fresh mozzarella (acid-set) as the instructor talks about the basic science, chemistry, and art of making mozzarella. We will also discuss how to make a variety of other beginner-level cheeses such as queso fresco, feta, cream cheese, cottage cheese, ricotta and others.
Option to purchase a take-home kit to make your own batches of mozzarella included with your ticket. It's all the supplies minus the milk. The kits make about 8 batches of cheese.

Cost: $40 general admission; $35 for Friends' members
*Class size is limited to 15 people, who will work in small groups of 2-3 people to make each batch of cheese. Registrants must be 15 years of age or older. Class will involve the use of heating elements to warm up the milk.
Instructor Bio: Dave originally grew up on a dairy farm in Iowa. He attended South Dakota State University and graduated with a B.S. degree in Dairy Science. His career in the dairy ingredient industry began in 1982, and he's been working within this industry ever since.
